Sweet & Sour Tofu Recipe

I had gotten a recipe for Sweet & Sour Tofu from Eatingwell.com (original recipe), but I decided I didn't like a couple of the ingredients they used and I wanted to modify it slightly to my tastes.  So, here is my take on this recipe:

4 Servings of ~1 3/4 cups each + 1 cup rice
Active time:  45 minutes
Total Time:  1 hour

Ingredients:

1 Fresh Pineapple
3 Tbl Rice-wine vinegar
1 Tbl Tomato paste
2 Tbl Low-Sodium Soy Sauce
2 Tbl Brown Sugar
1 14 oz Package Firm or Extra-Firm Tofu Rinsed, Drained and Cubed
2 Tsp Cornstarch
2 Tbl Canola Oil, Divided
2 Tbl Minced Garlic
1 Tbl Minced Ginger
3 Medium Bell Peppers (multiple colors look nice) cut into 1/2" strips
1 Medium Onion, Course Chopped
2 Cups Uncooked White Rice (4 cups cooked)

1)  Cut the pineapple up into cubes, being sure to remove the core.  With a spoon or some other implement, squeeze out 1/4 cup or so of the pineapple juice from the rind leavings.
2)  Mix the pineapple juice, vinegar, tomato paste, soy sauce and sugar in a bowl and whisk it until smooth.
3)  Put tofu in a bowl with 3 Tbl of the sauce mixture and marinade for 15 - 20 minutes, stirring occasionally to coat the tofu.
4)  While the tofu is marinating, add the cornstarch to the remaining sauce and whisk until smooth.
5)  Mince your garlic and ginger, chop your veggies.
6)  If not using instant rice, Start cooking your rice when you have about 5 minutes left on the marinade.
7)  In a wok (or large skillet), heat up 1 Tbl of the oil.
8)  With a slotted spoon, transfer the tofu to the wok and flip it to evenly coat with the oil.
9)  Pour remaining sauce from the tofu bowl back into the original sauce and stir.
10)  Cook the tofu for 7-9 minutes, flipping occasionally, until golden brown.
11)  Transfer the tofu to a holding pattern in a dish somewhere.
12)  Heat remaining oil in wok and add garlic and ginger, stirring constantly, until fragrant.  Around 30 seconds.
13)  Toss in the veggies and cook until just tender.  About 4 minutes or so.
14)  Add in the sauce and cook, stirring until thickened,  30 seconds or so.
15)  Drop in the tofu and pineapple and cook until warmed through, 2 - 3 minutes
16)  Assuming you timed everything perfectly, your rice should be done.  Toss a cup of rice on a plate, put about a 1/4 of the wok fixin's on top, have yourself a tasty meal of around 500 calories.
